Pop up events are a way to showcase the chefs specialty, Birria Tacos. Birria Tacos (tacos de birria and sometimes called quesabirria tacos) consists of the braised beef meat inside a corn tortilla that's been pan-fried in the oil the Birria creates during its cooking process. All topped with cheese, onions and cilantro. Consommé is the broth that the meat is cooked in and it is used to dip your tacos in for extra flavor and juice.
